Stewed Eggplant and Cauliflower

Warm, low fat vegan and simple.

Stewed Eggplant and Cauliflower 

1 eggplant, peeled and cubed 

2 onions, chopped 2 onions, chopped 2 onions, chopped 2 onions, chopped

½ head cauliflower, cut into florets

3 tomatoes, chopped 

½ teaspoon salt 

Combine all ingredients in a pot and cook over a low heat for 30 minutes.
